This wine is opaque ruby in colour with a purple rim. There are lovely aromatics of ripe blackberry, black currant, licorice, baking spice and cigar box. It is incredibly rich and ripe on the palate with impressive tannins and longlasting structure. The flavours are concentrated and intense on the palate with a very lengthy finish. We recommend decanting and aerating this wine or aging for several years to come.
This is the ideal pairing with steak and other rich red meats such as lamb and venison. This wine also pairs perfectly with intense and strong cheeses such as an aged cheddar or Parmigiano-Reggiano.
2016 was a fantastic vintage for red wines – the dry, hot summer and cool fall allowed for healthy vines to produce perfectly ripe fruit for ageworthy red wines. Sourced from three blocks of Cab Sauv vineyards in warmer areas on Niagara-on-the-Lake. Select barrels were chosen for the final blend after aging for 20 months in French oak before bottling in late summer 2018. Bottled unfined and unfiltered.
