We’ve combined base ciders from 2019 and 2018, from multiple varieties including Northern Spy and Golden Russet, amongst others. The ciders were aged in neutral oak to help round out any roughness on the palate, leaving a crisp but very drinkable dry cider.
After extensive hop trials we decided to dry-hop the finished cider using hops grown in both Niagara and the Pacific Northwest. The hop varieties we used are a combination of both Citra and Mosaic hops. We feel like there is enough hop impact there, without compromising the flavours of the base cider or overpowering it.Read more »
