Concentrated nose filled with fresh peach, mandarin orange, wildflower honey and poached pear. Fruit-focused flavours on the palate with very good weight and texture, balanced acidity and long flavourful finish.
Sourced from two low-yielding vineyards, the grapes were picked and sorted by hand, de-stemmed and gently pressed. After cold settling for five days, clear juice was racked and fermented slowly in stainless steel for twenty-five days. Aged post-fermentation in stainless steel without malo-lactic fermentation, kept on light lees for three months until final filtration and bottling.
