We are huge Chardonnay fans at Fielding! Our 2009 Chardonnay has the perfect amount of oak. It’s creamy and light enough to pair with your favourite summer dishes.
Light gold in colour with complex and integrated aromas of cantaloupe, toffee, roasted pecans, brown sugar, and golden delicious apple. Midweight on the palate with nice texture, great acid backbone and intense finish.
Gently pressed, each lot of Chardonnay was cold settled for 72 hours, then racked into barrel. Barrel-fermented at warm temperatures, followed by a full malo-lactic fermentation in barrel. Kept on heavy lees, which were stirred on a monthly basis up until final racking from barrel. The final barrel selection combined wines from two mature plantings of Chardonnay vines, both close to the shore of Lake Ontario. The barrels selected for the final blend consisted of 55% neutral French oak barrels (barriques and puncheons), 35% new French oak barriques, and 10% Stainless Steel barrels. One quarter of the barrels selected underwent a spontaneous (or “wild”) fermentation. Combined after nine months in barrel, filtered and bottled.
Cooperage: 90% French Oak barrels, 10% stainless Steel barrels.
