2007 Merlot

Medium brick red in colour. Aromas of roasted coffee beans, black forest cake, licorice, cedar, with notes of mint and cinnamon. Soft on the palate, midweight structure with fine tannins and flavours of dark chocolate, dried fig and plum.

Merlot grapes from our two Estate Vineyards were picked and vinified separately. Destemmed without crushing followed by a short cold soak, after which the fermentation lasted ten days. Total maceration time of four weeks, followed by gentle pressing into barrel to complete malolactic fermentation. After aging 18 months on the lees, only five barrels were selected through a series of blind tastings to make up the final blend for this wine. Just 112 cases were bottled, unfined and unfiltered.
