This Viognier has expressive aromas of stone and citrus fruit such as peach, lime and tangerine, and is complemented by underlying notes of white flower, spice and honey. It is rich and round on the palate with impressive texture and weight, while remaining vibrant, fruit-forward and fresh.
This wine pairs perfectly with a variety of richer dishes including lobster, butter chicken, pork tenderloin and salmon. It pairs well with a variety of different cheeses especially brie and aged gouda.
Sourced from a warm area of the Creek Shores appellation of Niagara-on-the-Lake, this Viognier was picked late in the season to allow the grapes to develop more complex and intense flavours. After soaking on the skins for several hours, the juice was pressed, cold-settled and put into older neutral oak French barrels. After fermentation, the wine was aged on lees for several months prior to bottling.
