2017 Rose Web

2017 Rosé

This rosé is pale pink with a salmon hue in colour. It has intriguing aromas of wild strawberry, pink grapefruit, watermelon, citrus and mint. It is dry and crisp on the palate with bright fruit flavours and a clean and elegant finish. It’s incredibly refreshing, light and easy drinking.

Rosé is known to be an excellent pairing with a variety of different food—and this one is no exception. Pair with chicken burgers, pizza, tacos, seared tuna, light salads and grilled salmon. It’s also the perfect pairing for charcuterie and cheese as well as a variety of other appetizers.

Sourced from two vineyards located in cooler locations on the shore of Lake Ontario, picked purposefully with the intent of making Rosé. The Gamay component was selected from the Niagara Lakeshore sub-appellation and was pressed following approximately 12 hours of skin contact, given the juice a pale pink hue, then fermented at cool temperatures in stainless steel. The Pinot Noir component was picked by hand, pressed immediately and the resulting juice was fermented in older neutral barrels following cold settling. After completion of fermentation the two components were combined and bottled in early 2018.
