This wine was inspired by the idea that there can be great synergy between the aromatics and energy of our aromatic whites, coupled with the richness and complexity of our barrel-fermented wines. Each component was vinified separately in both stainless steel and barrel and then blended to showcase their aromatic intensity, balance and richness. The name was inspired by our Jack Rabbit Flats Vineyard, once a very popular “parking” spot among locals. As it turns out, more than just great wine was conceived in our vineyards…
Each varietal that comprised the final blend was vinified separately, and then selected in the desired proportion using a series of blind tastings. A portion of the Chardonnay, Viognier and Sauvignon Blanc were barrel-fermented and aged in a combination of neutral and new French oak barrels. Each component of the wine was kept on its lees in tank and barrel following the completion of fermentation, and aged individually. The final blend, once selected, was assembled and bottled.
