We are thrilled to introduce our first Traditional Method Sparkling wine! A classic Chardonnay & Pinot Noir blend, this wine was a true labour of love for our winemaking team!

"This is labeled non-vintage but is made entirely of Pinot Noir and Chardonnay from the 2009 vintage grown at the estate’s Tufford Road vineyard. Great first effort for this Champagne-style bubbly with a bready-yeasty nose to go with citrus-lemon and toast notes. Winemaking Notes

Selected in the vineyard for making sparkling wines, the two plots of Pinot Noir and Chardonnay were harvested early to ensure the final wine had moderate alcohol, and sufficient acidity. Picked by hand and gently pressed in fractions, the clear juice was fermented at cold temperatures in stainless steel. The “cuvee” was blended, cold stabilized and sterile filtered. Secondary fermentation took place in bottle and was aged on lees for over two years. Riddled and disgorged, and aged another four months prior to release.
