Pale straw in colour with expressive aromas of spiced apple, honeydew melon, orange marmalade, mixed fruit salad, and preserved peaches. Light-bodied and fresh on the palate, a touch of residual sugar with nice acidity and lasting flavours on the finish.

Selected from a plot of clone 809 (Chardonnay Musqué) vines planted in our Jack Rabbit Flats Vineyard. Harvested early in the fall to help retain the fresh aromatics without losing acidity, and to help keep the alcohol percentage at a moderate level in the final wine. The grapes were gently pressed after undergoing a few hours cold soaking on the skins in a sealed press. Cold settled under reductive conditions, then inoculated with a selected yeast strain once the juice warmed up to 10˚C, and fermented at cool temperatures in stainless steel. The fermentation was halted with a touch of residual sweetness to balance the fresh acidity. Racked off its lees after fermentation and kept under reductive conditions, cold stabilized, filtered, and bottled early in 2012.
