2007 Chosen FEW

This is our introductory vintage of Chosen FEW, a wine chosen from our best barrels, made in small quantities only from select vintages. The result is a wine which we believe shows the full potential of making elegant, ageworthy wines in Niagara with great complexity and intensity.

Dense crimson red/purple in colour. Integrated and complex nose with aromas of wild blueberry, black cherry, graphite, toasted oak, caramel, cracked black pepper, dried fig, and lavender. Concentrated on the palate, ripe tannins with good acidity that result in great structure, nicely textured mouthfeel, and a long finish.

2007 Chosen FEW

Winemaking Notes:

This is our introductory vintage of Chosen FEW, a wine chosen from our best barrels, made in small quantities only from select vintages. The result is a wine which we believe shows the full potential of making elegant, ageworthy wines in Niagara with great complexity and intensity. The 2007 Chosen FEW Red is comprised of Cabernet Sauvignon (45%), Merlot (41%), and Syrah (14%) sourced from four vineyards through Niagara. The wines were aged independently for eighteen months in a mixture of new and older oak barriques and “hogsheads”. After aging in barrel the wines were carefully selected using a series of blind tastings, assembled and bottled without fining or filtration.

This rounds out the big three reds from Fielding’s outstanding 2007 red vintage (Meritage and Syrah are the other two). This is the first wine under FEW label representing the best reds from select barrels of Cabernet Sauvignon (45%), Merlot (41%), and Syrah (14%) sourced from four vineyards throughout Niagara. Huge is an understatement. The nose kicks off with smoky, leathery, savoury dark fruits and rich spices. It’s thick on the palate and tight, even after two days of decanting, with meaty, complex fruits, cocoa, licorice and an array of spice. The name for this premium cuvee is derived from the combination of the winery’s initials and the fact that only 7 barrels were selected. Full bodied, this wine offers incredible complexity in the form of an ever evolving bouquet of mocha, coffee, cherry, plum, blueberry, smoke, minerals, pepper, graphite and mint. The mid palate is rich and ripe, and the finale extensive. The tannins ensure drinkability over the next seven years. It is a blend of 45% Cabernet Sauvignon, 41% Merlot and 14% Syrah.
