Winemaking

We trust our winemakers to craft only the highest standard of Fielding wines, focusing on grape varieties that perform best in our own estate vineyards. Our wines are premium quality VQA wines, produced from 100 percent Niagara-grown grapes, which reflect both the characteristics of our estate vineyards and the growing conditions of the vintage from which they originate.

At Fielding, we take every aspect of winemaking very seriously, ensuring each grape grown is treated with the utmost care, using hand harvesting and fruit sorting, minimal crushing and gentle pressing. We keep our vineyard lots separate, from harvest until the final blending and bottling, allowing for a greater understanding of our vineyards and a greater ability to create interesting, single vineyard wines when merited.

Our whites feature fresh, fruit-driven aromatics, coupled with well-balanced acidity and richness on the palate. Fielding whites include Riesling, Pinot Gris and Chardonnay, and smaller lots of select whites, such as Gewürztraminer, Sauvignon Blanc and Viognier.

Our red wines are crafted to integrate fruit character with barrel-derived complexities, well structured tannins and round mouthfeel. Our reds are barrel-aged until they are selected for final blending and bottling. Fielding reds focus primarily on Pinot Noir and Merlot, as well as unique and award winning red blends, such as our Red Conception and Meritage.
