A fun and versatile wine, this dry Rosé was crafted to be both rich and refreshing. Pale salmon in color with fresh aromas of watermelon, wild strawberries, orange peel, McIntosh apple, and sweet red pepper jelly. Good flavour and well balanced acidity on the palate, this wine has nice length of finish and should be served chilled.
Created using the saignée method, whereby a portion of the free run juice of the red grape components were separated from the skins during the first 24 hours of a cold soak. After being separated, the free run juice was then cold settled, and fermented cool with selected yeast strains as though it were an aromatic white wine. After aging a few months in stainless steel, the wine was then cold stabilized, filtered, and bottled.
